Cheesey Eggplant Slices

- 2 large eggplants with peel on shopping list
- olive oil shopping list
- garlic powder shopping list
- Grated Romano or parmesan cheese shopping list
- dry basil shopping list
- salt and pepper shopping list
- Thin sliced swiss or mozarella cheese, cut into quarters shopping list
How to make it
- Preheat oven to 425 F
- Cut eggplant into uniform round slices about 1/2 inch thick
- Lay each slice on a baking sheet to fill up sheet
- brush each slice liberal with olive oil
- Sprinkle on salt and pepper, basil, garlic powder and grated cheese
- Bake until soft and golden ( 30 to 45 mins )
- Carefully remove slices and place piece of cheese on an eggplant circle, top with another to make little eggplant sandwiches
- Serve as an appetizer or side
- Reheats well.
