Ingredients
  • 1 zucchini, grated ( squeeze out excess liquid )
  • 1 onion, grated
  • 1/2 carrot, grated
  • 1 clove garlic, minced
  • 1/2 celery root (celeriac), peeled and grated
  • 3/4 tablespoon anise seed, crushed
  • 1/2 tablespoon celery seed
  • 1 teaspoon salt
  • 1 pinch ground black pepper
  • 1/2 cup all-purpose flour, or as needed
  • oil for frying

Directions
  1. Mix zucchini, onion, carrot, garlic, celery root, anise seed, celery seed, salt, and pepper together in a bowl.
  2. Gradually stir in flour until you have a soft, wet dough that sticks to your hands.
  3. Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  4. Drop dough by tablespoons into the skillet, and fry on both sides until lightly browned.
  5. Drain on paper lined trays
  6. Serve with sauces if desired like: yoghurt mint, sour cream dill etc etc
