Ingredients

How to make it

  • Husk and clean ears of corn.
  • Place in heavy foil, fold closed.
  • Roast in a 325 degree oven for 30 to 45 minutes.
  • Cool and cut off cob.
  • Mix with peppers, onion and beans.
  • Dressing: blend together and add sugar to taste.
  • Pour over veggies and let sit overnight.
  • A few hours before serving add avocado and cucumber
