Roasted Corn Salad

- 6 ears fresh corn shopping list
- ½ red pepper chopped small shopping list
- ½ green pepper chopped small shopping list
- ½ orange or yellow pepper chopped small shopping list
- ½ sweet or red onion diced small shopping list
- 1 can black beans drained shopping list
- ************************ shopping list
- Dressing shopping list
- ************************ shopping list
- juice of 4 lemons shopping list
- 4 cloves garlic minced shopping list
- salt and pepper to taste shopping list
- 1 tbls hot sauce shopping list
- ¾ - 1 cup chopped cilantro (fresh, washed and pressed dry. shopping list
- ½ cup olive oil shopping list
- 1 avocado sliced into small pieces shopping list
- ½ cucumber chopped small shopping list
How to make it
- Husk and clean ears of corn.
- Place in heavy foil, fold closed.
- Roast in a 325 degree oven for 30 to 45 minutes.
- Cool and cut off cob.
- Mix with peppers, onion and beans.
- Dressing: blend together and add sugar to taste.
- Pour over veggies and let sit overnight.
- A few hours before serving add avocado and cucumber
