Soda Pop Pound Cake With Honey Strawberries

Ingredients
- cake shopping list
- 2 cups granulated sugar shopping list
- 4 large eggs, room temperature shopping list
- 1/3 cup lemon lime soda (Sprite or 7Up), room temperature shopping list
- 1 Tbl grated lemon zest shopping list
- 2 Tbl fresh lemon juice shopping list
- Pinch of salt shopping list
- 8 oz unsalted butter, melted and cooled slightly shopping list
- 2.5 cups all purpose flour, sifted shopping list
- honey strawberries shopping list
- 6 cups sliced fresh strawberries shopping list
- 1/2 cup honey shopping list
- whipped cream shopping list
- 1 1/2 cup whipped cream shopping list
- 3 Tbl. powdered sugar shopping list
How to make it
- CAKE
- Preheat oven to 325 degrees and adjust oven rack to middle position.
- line bottom of a 9X5 loaf pan with parchment and grease sides.
- In a large bowl whisk together sugar, eggs, soda, lemon zest, lemon juice and salt.
- Gradually add cooled, melted butter.
- Add flour in 2 or 3 additions.
- Mix well until all ingredients are incorporated.
- Pour batter into prepared loaf pan.
- Bake for 75-90 minutes or until tester comes out clean. (the cake will brown considerably before it is done)
- Allow cake to cool in pan for 10 - 15 minutes.
- Remove from pan allow cake to come to room temperature.
- While cake is cooling prepare strawberries.
- HONEY STRAWBERRIES
- Toss together in a medium bowl and set aside at room temperature while cake is cooling.
- WHIPPED CREAM
- Beat together until soft peaks form
- Cut pound cake into 3/4 inch slices.
- Top with strawberries (pour some of the accumulated juices on as well) and whipped cream
