Ingredients
  • 3 Tablespoons shortening
  • 1 package of country cured ham (It is a very thin and salty ham) Cut into about 3x3 inch or the size of a biscut
  • 6 cups of coffee
  • can of biscuts
  • 6 eggs scrambled

Directions
  1. In a cast iron skillet, heat shortening and add your ham; brown on both sides. Remove and place in a glass bowl. Once all ham is cooked pour your grease on top of ham. Heat pan getting all the bits on the bottom cooked and add coffee and get all the goodies off the bottom. Return ham and grease to pan and serve with hot biscuits and scrambled eggs.

I've heard of red-eye gravy but didn't know it actually contained coffee. I'll try this next time I get a ham.


Please let me know what you think. The ham you need is cured ham, sometimes it's not even refridgerated, and it's in a shrink tight package. Enjoy!!


It seems funny to me that people would be wary to try red eye gravy. Most of us drink coffee with breakfast and don't think a thing about it.
