Fake-bake Ziti

- 3 tbsp EVOO shopping list
- 3 cloves garlic, finely chopped shopping list
- 1 can whole peeled tomatoes shopping list
- 1 can crushed tomatoes shopping list
- hanful of fresh basil or a tsp of dried shopping list
- salt and pepper to taste shopping list
- 1tsp sugar shopping list
- 1 lb ziti rigate shopping list
- 2 tbsp butter shopping list
- 2 tbsp flour shopping list
- a pinch of nutmeg shopping list
- 2 cups whole milk shopping list
- 2 cups shredded mozzarella cheese shopping list
How to make it
- Put your pasta water on to boil.
- Preheat the broiler
- Heat a med saucepan over med heat, add evoo then garlic
- saute garlic a min or two but don't brown
- chop whole tomatoes and add them to pan
- add crushed tomatoes and salt and sugar and simmer 10 min
- Add basil and simmer over low for 10 min more
- Add salt and pasta to water and boil for 6 min, leave pasta a bit chewy
- While pasta cooks, make bechamel sauce: melt butter in a small pot over med
- wisk in flour, salt, pepper, & nutmeg;cook 1 min
- Stir in milk and bring sauce to a bubble
- cook 5 min to reduce
- drain pasta and add to a baking dish
- pour tomato sauce over pasta and mix.
- pour bechamel sauce over pasta - don't mix.
- Cover the top of the pasta with cheese
- Place casserole under hot broiler and melt cheese till brown and bubbly, 3 -5 min.
