How to make it

  • Put your pasta water on to boil.
  • Preheat the broiler
  • Heat a med saucepan over med heat, add evoo then garlic
  • saute garlic a min or two but don't brown
  • chop whole tomatoes and add them to pan
  • add crushed tomatoes and salt and sugar and simmer 10 min
  • Add basil and simmer over low for 10 min more
  • Add salt and pasta to water and boil for 6 min, leave pasta a bit chewy
  • While pasta cooks, make bechamel sauce: melt butter in a small pot over med
  • wisk in flour, salt, pepper, & nutmeg;cook 1 min
  • Stir in milk and bring sauce to a bubble
  • cook 5 min to reduce
  • drain pasta and add to a baking dish
  • pour tomato sauce over pasta and mix.
  • pour bechamel sauce over pasta - don't mix.
  • Cover the top of the pasta with cheese
  • Place casserole under hot broiler and melt cheese till brown and bubbly, 3 -5 min.
