So easy and qucik and it tastes like it has been baking all day - I serve it with Texas toast or crusty bread.

Ingredients
  • 3 tbsp EVOO
  • 3 cloves garlic, finely chopped
  • 1 can whole peeled tomatoes
  • 1 can crushed tomatoes
  • hanful of fresh basil or a tsp of dried
  • salt and pepper to taste
  • 1tsp sugar
  • 1 lb ziti rigate
  • 2 tbsp butter
  • 2 tbsp flour
  • a pinch of nutmeg
  • 2 cups whole milk
  • 2 cups shredded mozzarella cheese

Directions
  1. Put your pasta water on to boil.
  2. Preheat the broiler
  3. Heat a med saucepan over med heat, add evoo then garlic
  4. saute garlic a min or two but don't brown
  5. chop whole tomatoes and add them to pan
  6. add crushed tomatoes and salt and sugar and simmer 10 min
  7. Add basil and simmer over low for 10 min more
  8. Add salt and pasta to water and boil for 6 min, leave pasta a bit chewy
  9. While pasta cooks, make bechamel sauce: melt butter in a small pot over med
  10. wisk in flour, salt, pepper, & nutmeg;cook 1 min
  11. Stir in milk and bring sauce to a bubble
  12. cook 5 min to reduce
  13. drain pasta and add to a baking dish
  14. pour tomato sauce over pasta and mix.
  15. pour bechamel sauce over pasta - don't mix.
  16. Cover the top of the pasta with cheese
  17. Place casserole under hot broiler and melt cheese till brown and bubbly, 3 -5 min.
