Boiled beef (shoulder) with vegetables and apple horseradish sauce.

Ingredients
  • 1 kg shoulder, 2 pieces.
  • 1 big onion chopped.
  • 8 small sweet carrots.
  • 1 medium celery root, cut in 2 cm cubes.
  • 8 Brussels sprouts.
  • Sea salt.
  • 1 bouquet garni ( 15 grains white pepper, 3 cloves garlic,1 bay leave, 10 coriander seeds, 2 grains all spice crushed, 1 sprig thyme, 1 ts dried thyme, 3 cloves) , (put in a pices of tulle fastened with cooking thread.
  • 1/4 ts ground nutmeg.
  • salt and pepper to taste.
  • 450 gr apples Granny smith peeled cut in cubes ( keep the peel).
  • 5 cm pipe cinnamon.
  • 1 ts sugar.
  • Juice of 1 lemon.
  • 1 clove.
  • 3 tbs horseradish.
  • salt and pepper to taste.

Directions
  1. Put the meat in a big cooking pan, fill with water a little more then half of the pan and boil on medium heat, as soon as the water boils, lower heat to low, add sea salt, onion and the bouquet garni.The first 20 minutes skim, then cover half and simmer on the lowest temperature for 150 min, stirring the meat from time to time.
  2. If necesary we add some water so that the meat remains covered.
  3. Now we add the vegetables and cook for 30 min more.
  4. With a skimmer we take the vegetables out and put in a big bowl, keep warm.
  5. Cook the meat for 30 min more, then take out and keep warm.
  6. Put the apples withy the peel in a pan with water till apples are covered add cinnamom, clove, lemon juice and the sugar, cook apples till they remain almost without liquid we take them out and with the horseradish we beat in the blender till we have a smooth sauce, add salt and pepper to taste.
  7. Cut the meat in bite chunks and put in the middle of 4 soup plates, add vegetables around the meat and add the sauce.
  8. Sprinkle with a little salt and nutmeg, garnish with celery leaves.
