Plum Tomatoes And Artichokes With Penne

- 12 oz. oil-marinated artichoke hearts shopping list
- 1 c chopped onions shopping list
- 1 Tbs fine minced garlic shopping list
- 2 28 oz. cans plum tomatoes,crushed shopping list
- 2Tbs tomato paste shopping list
- 1 tsp dried basil shopping list
- 1/2 tspdried oregano shopping list
- 1/8 tsp red pepper flakes salt,fresh ground black pepper shopping list
- 2 Tbs chopped flat-leaf parsley shopping list
- Cooked penne pasta (from 12oz box) shopping list
How to make it
- Drain artichokes,reserving the oil and halve lengthwise.
- Place 3 Tbs of artichoke oil marinade in heavy pot. Add the onions and stir over low heat for 10 mins,adding the garlic during the last 2 mins.
- Stir in tomatoes,tomato paste,basil,oregano and red-pepper flakes.
- Season with salt and fresh ground pepper. Simmer 45 mins.
- Add reserved artichoke hearts with remaining oil marinade and stir while simmering for 20 mins. Stir in the parsley and adjust the seasonings. Serve in shallow bowls over cooked penne.
