Grilled Peppers in Criolla Sauce

- 4 bell peppers, one of each color, red, green, orange and yellow shopping list
- 2 tomatoes, seeded and finely chopped shopping list
- 1 onion, finely chopped shopping list
- 1 Serrano chile, finely chopped shopping list
- 1 clove garlic, finely chopped shopping list
- 1 tbls. parsley, finely chopped shopping list
- 2 1/2 tbls. olive oil shopping list
- 1 1/2 tbls. red wine vinegar shopping list
- salt and pepper to taste shopping list
How to make it
- Heat grill to high
- Grill peppers, turning until skins are blackened
- Transfer peppers to bowl and cover tightly with plastic wrap
- Let cool enough to handle
- Peel peppers
- Halve lengthwise, and remove seeds and stems
- In another mixing bowl, add remaining ingredients
- Add peppers and toss to combine
