Moroccan Spaghetti Squash

- 1 3-4 lb. spaghetti squash shopping list
- 2 cloves garlic, finely chopped shopping list
- 1/2 stick butter, softened shopping list
- 1 tsp. cumin shopping list
- 1/3 tsp. coriander shopping list
- 1/8 tsp. cayenne shopping list
- 3/4 tsp. salt shopping list
- 2 tbls. cilantro, chopped...(I use parsley as I don't like cilantro) shopping list
How to make it
- Poke squash all over with fork and microwave for 6-7 minutes
- Turn over and microwave until squash is tender, another 8-10 minutes
- Cool 5 minutes
- Melt butter in skillet and cook garlic until golden
- Stir in spices and remove from heat
- Halve squash lengthwise and remove seeds
- Scrape flesh with fork
- Add to bowl with butter mixture and cilantro
- Toss to coat

love this.... I would use parsley also... as i'm not very fand of cilantro either ^5

I made this for dinner. We loved it. Also I added some shredded cheese with fresh parsley.
I was out of cilantro ( I love it ) Thanks again for this great recipe!
