Chorizo and Cheese Baked Potatoes

Served with a nice green salad and you have dinner
Ingredients
- 1 egg shopping list
- 2 tbls. lemon juice shopping list
- 1/2 tsp. dry mustard shopping list
- 1/2 tsp. salt shopping list
- 1 cup olive oil shopping list
- 1 lb.velveeta shopping list
- 1/2 lb. chorizo, cut into 1/4 inch cubes shopping list
- 4 jalapenos, seeded and chopped shopping list
- 8 baked potatoes shopping list
How to make it
- In blender, add egg, lemon juice, mustard and salt
- Blend well
- Gradually add oil until mixture is the consistency of mayonnaise
- In saucepan, melt cheese over very low heat
- Add egg mixture, chorizo, and jalapenos, and stir until blended
- Serve over baked potato
