Ingredients
  • 1 egg
  • 2 tbls. lemon juice
  • 1/2 tsp. dry mustard
  • 1/2 tsp. salt
  • 1 cup olive oil
  • 1 lb.velveeta
  • 1/2 lb. chorizo, cut into 1/4 inch cubes
  • 4 jalapenos, seeded and chopped
  • 8 baked potatoes

Directions
  1. In blender, add egg, lemon juice, mustard and salt
  2. Blend well
  3. Gradually add oil until mixture is the consistency of mayonnaise
  4. In saucepan, melt cheese over very low heat
  5. Add egg mixture, chorizo, and jalapenos, and stir until blended
  6. Serve over baked potato
