Cheesy Green Chili Rice Casserole

- ¾ lb monterey jack cheese, shredded shopping list
- 2 cups sour cream shopping list
- 2 cans (4 oz.) chopped green chilies shopping list
- 3 cups cooked rice shopping list
- salt and pepper shopping list
- ½ cup cheddar cheese, grated shopping list
How to make it
- Thoroughly mix sour cream and green chilies. Butter a 1-1/2 quart casserole well. Season rice with salt and pepper, if necessary. Layer rice, sour cream mixture, and shredded Monterey Jack cheese in that order until you finish with rice on the top.
- Bake in a 350 degree oven for 30 minutes. During last few minutes of baking, sprinkle grated Cheddar cheese over the rice and allow to melt before removing from oven. Serves 6 to 8.
