Cheesy Green Chili Rice Casserole Recipe
A cheesy, green chile and rice casserole that is sure to please! It is so easy to make especially if you have leftover rice on hand.

Ingredients
  • ¾ lb Monterey Jack cheese, shredded
  • 2 cups sour cream
  • 2 cans (4 oz.) chopped green chilies
  • 3 cups cooked rice
  • Salt and pepper
  • ½ cup Cheddar cheese, grated

Directions
  1. Thoroughly mix sour cream and green chilies. Butter a 1-1/2 quart casserole well. Season rice with salt and pepper, if necessary. Layer rice, sour cream mixture, and shredded Monterey Jack cheese in that order until you finish with rice on the top.
  2. Bake in a 350 degree oven for 30 minutes. During last few minutes of baking, sprinkle grated Cheddar cheese over the rice and allow to melt before removing from oven. Serves 6 to 8.
