How to make it

  • Par cook the potatoes in a pot of water until they are fork-tender; let cool.
  • While potatoes are cooking, mix the lime zest, salt and cayenne pepper well. Set aside.
  • Preheat oven to 450.
  • Slice each potato lengthwise into wedges. Spray a baking sheet with Pam, spread out the potatoes skin side down. Spray potatoes with Pam and sprinkle evenly with all the lime mixture.
  • Bake until lightly browned, maybe 20 minutes, and serve.
  • I think you're gonna love this as much as Mark and I do!

    I Think If Ya Cut The Sweet Potatoes Into Thick Enough Wedges And Lay On Foil On The Grill, It May Be OK. I'll Give It A Try This Weekend.

    Oh, this is definitely on the menu!! Love the lime zest and all the flavor you have here...thanks for the indoor method of cooking. My grill just died, overuse......LOL

    Yum, yum, yum! I use these flavors with barbequed corn on the cob. They go well with that so I know they must be delicious with this. Thanks for the post.
