Elaines Spinach Soup

- 1 lb fresh, baby spinach leaves shopping list
- 1/2 tsp each salt & pepper shopping list
- 2 cups water shopping list
- 2 tbsp lemon juice shopping list
- 1 tsp lemon zest shopping list
- 1 tbsp raw sugar (diabetics may safely use 1 tsp stevia) shopping list
- 2 green onions, coarsely chopped shopping list
- 1 tbsp butter shopping list
- 1 cup milk shopping list
How to make it
- Place the spinach into a medium-sized cooking pot
- Add the water
- Add lemon juice
- Add salt & pepper
- On LOW heat, bring to a boil
- Cook on LOW until spinach is well wilted
- Using an immersion blender, grind up the spinach
- Add the chopped onions and continue cooking on LOW until onions are soft
- Grind with the immersion blender again
- Add the butter
- Slowly add the milk, stirring constantly as you add it
- At serving time, sprinkle the lemon zest on top of each bowl of soup.
