Ingredients

How to make it

  • Place the spinach into a medium-sized cooking pot
  • Add the water
  • Add lemon juice
  • Add salt & pepper
  • On LOW heat, bring to a boil
  • Cook on LOW until spinach is well wilted
  • Using an immersion blender, grind up the spinach
  • Add the chopped onions and continue cooking on LOW until onions are soft
  • Grind with the immersion blender again
  • Add the butter
  • Slowly add the milk, stirring constantly as you add it
  • At serving time, sprinkle the lemon zest on top of each bowl of soup.
