Ingredients
  • 1 lb fresh, baby spinach leaves
  • 1/2 tsp each salt & pepper
  • 2 cups water
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp raw sugar (diabetics may safely use 1 tsp STEVIA)
  • 2 green onions, coarsely chopped
  • 1 tbsp butter
  • 1 cup milk

Directions
  1. Place the spinach into a medium-sized cooking pot
  2. Add the water
  3. Add lemon juice
  4. Add salt & pepper
  5. On LOW heat, bring to a boil
  6. Cook on LOW until spinach is well wilted
  7. Using an immersion blender, grind up the spinach
  8. Add the chopped onions and continue cooking on LOW until onions are soft
  9. Grind with the immersion blender again
  10. Add the butter
  11. Slowly add the milk, stirring constantly as you add it
  12. At serving time, sprinkle the lemon zest on top of each bowl of soup.
