Ingredients
  • 2 to 4 pound duckling
  • honey
  • grated peel of 1 orange, or mandarin orange
  • 1/2 bunch green onions
  • SAKE SAUCE (recipe follows)
  • 1 cup Mirin (sweet sake)
  • 1/2 cup soy sauce (San-J premium preferred)
  • 1/4 cup fresh squeezed orange juice
  • 1 teaspoon grated ginger root
  • 1/4 cup brown sugar
  • 1 tablespoon arrowroot or cornstarch
  • 1 leek, finely julienned

Directions
  1. Place duckling on rack in baking pan
  2. Bake at 300*F. for 2 hours, basting with honey every 15 minutes
  3. Remove from oven and cool to room temperature
  4. Remove bones from duck and cut meat into desired slices
  5. Sprinkle orange peel and green onions over duck
  6. Pour Sake Sauce over duck
  7. FOR THE SAUCE:
  8. Combine mirin, soy sauce, orange juice, and ginger in small saucepan
  9. Remove from heat and stir in brown sugar
  10. Mix arrowroot or cornstarch with a small amount of hot liquid, Add to pan
  11. Cook and stir until sauce thickens slightly
  12. Strain sauce through fine strainer into another pot or sauce boat
  13. Add leek to sauce and mix gently
  14. Let stand 10 minutes to blend flavors
