How to make it

  • In a large saucepan, heat up the butter and the oil together.
  • Add the bacon and cook for 2 minutes.
  • Add the onion, celery, carrots, tomatoes, garlic and seasoning.
  • Cover and cook gently for 20 minutes.
  • Pour in the ham stock.
  • Add the basil.
  • Simmer, covered, for 1 hour.
  • Add the leeks and the cabbage.
  • Cook for a further 30 minutes.
  • Stir in the tomato puree and the macaroni.
  • Cook a further 10 minutes.
  • Before serving, stir in the parsley.
  • Sprinkle with Parmesan cheese, if liked.
