In my never ending quest for a new and different BBQ/Grilling sauce, I ran across this yummy sounding recipe (and illustration) at www.telliquah.com. They call it a campfire recipe, but I never camp with glass baking dishes or refrigerators. Ha

Ingredients
  • 2/3 Cup olive oil
  • 1/2 Cup orange juice
  • 2 tsp orange zest
  • 1 clove garlic crushed
  • 2 tsp dried sage
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • ......
  • 4 pork chops, one inch thick

Directions
  1. Mix the seven marinate ingredients thoroughly and pour into a one gallon re-sealable plastic bag.
  2. Put the chops into the bag, squeeze out excess air, and seal. Place the bag in a baking dish (in case of leakage) and refrigerate for 12 to 24 hours. Turn the chops a time or two. (Just flop the bag over.)
  3. Turn grill on to medium heat and lightly oil the grills of the grill. (:^) editorial license)
  4. Cook chops in the covered grill for 5 minutes on each side.
  5. Check doneness by a small cut into the center. Look for a slight pink, or white, depending on your taste.
