Bistro French Onion Chicken Recipe
Put a French twist on chicken with sweet caramelized onions and a toast baguette.From Country Woman.

  • 1 lg. sweet onion,thin sliced
  • 3tsp canola oil,divided
  • 2tsp brown sugar
  • 2tsp balsamic vinegar
  • 4 boneless,skinless chicken breast halves(4oz ea)
  • 4 slices French bread baguette
  • 1/4c shredded swiss cheese

Directions
  1. In large non-stick skillet,cook and stir onion in 1 tsp oil over med-low heat for 10 mins. Stir in brown sugar and vinegar;cook 5-10 mins more or till trnder and golden brown. Remove,keep warm.
  2. In same skillet,brown chicken in remaining oil on both sides. Add broth,stirring to loosen browned bits from pan. Transfer to 11x7" baking dish coated with spray;top with onion mixture. Place baguette slice over each chicken breast;sprinkle with cheese.
  3. cover and bake 350 for 15 mins.Uncover and bake 3 t0 5 mins longer or till meat thermometer reads 170.
