Key Lime Grilled Shrimp And Mango Recipe

Ingredients
  • 16 large shrimp peeled and cleaned (U 12's)
  • Marinate in the juice of 3 limes, 1 teaspoon lime zest, 2 tablespoons olive oil, little black pepper, 1 table spoon chopped parsley 2 dashes ginger powder and a sprinkle of garlic power 1/2 oz good quality tequila
  • Chill for 4 hours
  • Soak bamboo skewers in cold water
  • Peel and cut fresh ripe mango into 1" cubes
  • Cut a large red pepper into 1" cubes
  • Skewer alternating shrimp, mango, red pepper on skewers
  • Grill on high heat for 2-3 minutes on both sides
  • Serve on white rice cooked with marinate and a little chicken stock or by themselves
  • Enjoy!

Directions
  1. Prepare shrimp and marinate for 4 hours
  2. Remove from marinate and make rice
  3. Grill and serve over rice.
