English Victoria TeaTime Sandwich

This teatime sandwich is served at the Ritz hotel in London....The recipe has been Americanized... Havent tried this but it sounds delicious to me...This is a Teatime recipe.
Ingredients
- 1/2 cup butter, softened (1 stick) shopping list
- 1/2 cup sugar shopping list
- 2 medium eggs, beaten shopping list
- 1 cup self-rising flour shopping list
- Filling: shopping list
- 4 tablespoons strawberry jam shopping list
- 2/3 cup heavy cream, whipped shopping list
How to make it
- Preheat oven to 375 degrees.
- Lightly butter two 8 inch cake pans and line with parchment paper or wax paper.
- Cream butter and sugar until light and fluffy.
- Add eggs gradually, beating well.
- Sift flour and fold in, using a large metal spoon; stir lightly but thoroughly.
- Pour batter into pans and smooth tops with an offset spatula.
- Bake 20 minutes; cool thoroughly.
- Spread jam atop one layer.
- Spread whipped cream over jam and top with second layer.
- Slice in little sections like pie.
