English Victoria TeaTime Sandwich Recipe
This teatime sandwich is served at the Ritz hotel in London....The recipe has been Americanized... Havent tried this but it sounds delicious to me...This is a Teatime recipe.

Ingredients
  • 1/2 cup butter, softened (1 stick)
  • 1/2 cup sugar
  • 2 medium eggs, beaten
  • 1 cup self-rising flour
  • Filling:
  • 4 tablespoons strawberry jam
  • 2/3 cup heavy cream, whipped

Directions
  1. Preheat oven to 375 degrees.
  2. Lightly butter two 8 inch cake pans and line with parchment paper or wax paper.
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs gradually, beating well.
  5. Sift flour and fold in, using a large metal spoon; stir lightly but thoroughly.
  6. Pour batter into pans and smooth tops with an offset spatula.
  7. Bake 20 minutes; cool thoroughly.
  8. Spread jam atop one layer.
  9. Spread whipped cream over jam and top with second layer.
  10. Slice in little sections like pie.
