Ingredients
  • 2 large lumps of butter - I reckon about 2-3oz. total, but that's a guesstimate
  • 2 bananas, cut in half lengthways, then cut in half again crosswise
  • A good handful of brown sugar (average woman's hand size)
  • Some evaporated milk - a good 'glug'
  • Some vanilla essence
  • Some brandy (you can leave out the booze if that's not your thing.)

Directions
  1. Take a good stout heavy-bottomed non-stick frying pan.
  2. In it, melt the butter over a fairly high heat.
  3. Put in the bananas and fry a minute or so.
  4. Throw in the sugar, and allow it to melt into the butter. It should start to turn to caramel. Keep it moving.
  5. Add in some evaporated milk and a few drops of vanilla.
  6. Add a splash of brandy if that's your thing.
  7. When it looks like bananas covered in toffee sauce, serve it up with ice-cream and heavy cream.
