Vodka Spiked Gazpacho Recipe
VODKA SPIKED GAZPACHO This recipe came from an estate sale. I obtained it when I purchased the family collection from the McLean Estate in Irving, Texas in 1982.

Ingredients
  • 2 pounds ripe tomatoes cored and chopped
  • 2 tablespoons red wine vinegar
  • 1 small red onion chopped
  • 2 scallions chopped
  • 1 hot green chili chopped
  • 2 garlic cloves finely minced
  • 1 small cucumber chopped
  • 1/4 cup chopped coriander leaves
  • 2 tablespoon chopped fresh basil leaves
  • Juice of 1 lime
  • 1/4 cup olive oil
  • 1/4 cup vodka
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 ripe avocado sliced

Directions
  1. In large serving bowl combine all ingredients except avocado then serve with avocado slices.

This is another summer type recipe. Sounds so refreshing, and I love the ingredient combo, especially vodka! LOL.
