ABC Sandwich Recipe
Lunch can be quick and boring, but why not make it quick and delcious with this great sandwich treat.

Ingredients
  • 1 cup of mayonnaise
  • 1/2 cup of minced scallions, greens
  • 2 tablespoons brandy, only one you would drink
  • 1/4 teaspoon coarsely ground black pepper
  • 18 slices toasted bread, ciabatta or rustic are best
  • lettuce, iceburg or romaine
  • 12 ounces crab meat, fresh is best, but if using canned make sure all shells are removed
  • tomato slices
  • 12 slices good bacon, cut in half, cooked crisp and drained
  • 2-3 avocados, sliced

Directions
  1. In a small bowl, combine the mayonnaise, scallions and brandy.
  2. Mix well.
  3. For each sandwich, spread 3 pieces of bread with a portion of the mayonnaise mixture.
  4. Cover the first bread slice with lettuce leaves, some crabmeat, and one or two tomato slices.
  5. Add the second layer of bread and top with 4 slices of bacon and a layer of avocado.
  6. And some more tomato and lettuce.
  7. Cover with the third slice of bread.
  8. Secure with a toothpick.
  9. Slice in half and serve with your favorite side.

Goes this ever sound yummy! Will be trying this over the weekend - good sandwich for this hot weather.
