An easy, tart, and fresh summer salad. This compliments grilled meals, including fish, and it's also great for picnics and cook outs.

Ingredients
  • 2 medium cucumbers, sliced into fourths, and cut into bite sized pieces
  • 2 just ripe avocados, cut into bite sized pieces
  • 1 pt small cherry or grape tomatoes
  • juice from 1/2 large lemon
  • juice from 1-2 limes(to taste and depending on size and juice yield)
  • 2 green onions, tops only, sliced
  • 2T quality olive oil
  • 2-3T fresh cilantro, finely chopped
  • 2-3T fresh basil, finely chopped
  • season salt blend(ie onion/garlic/salt/pepper) to taste

Directions
  1. In medium bowl, whisk together juices, oil and salt
  2. Add veggies and herbs and stir or toss to coat
  3. Taste and season more, if needed
  4. Chill until ready to serve.
