How to make it

  • Blend 3 Tbs of the mint,lime juice,oil,rum and lime peel in blender until smooth. Pour over chicken in resealable plastic bag. Refrigerate 6 to 8 hours,turning occasionally.
  • Heat grill. Remove chicken from marinade;discard marinade. Sprinkle chicken with salt and peper. Grill,covered,over medium heat 8 to 10 mins. or till no longer pink in center,turning once. Sprinkle with remaining 1 Tbs. mint.

    Pat - I made this for what was supposed to just be a tiny immediate family dinner tonight. Then our cousins phoned and I insisted they join us. Your chicken was a huge hit. I had marinated cut up eggplant and zucchini and skewered those to grill, too, and served those over couscous. Lots of wine... my daughter brought a fruit tart... Thanks for adding what will be a staple.
