Ingredients

How to make it

  • Preheat oven to 400
  • Grease 9 inch iron skillet (or cake pan) with shortening
  • Mix together dry ingredients (muffin mix, flour, cheese and dill)
  • Melt butter in microwave safe bowl
  • Whisk eggs and milk into melted butter
  • Mix in dry ingredients
  • Add more milk if needed (a splash or two at a time)
  • Bake about 30 minutes, until golden brown.

    Ya, I could do this I think. Looks lighter and fluffier than I was imagining. Cross your fingers I'll find Corn Muffin Mix in my grocery store but I think maybe I've seen something like that. Thanks so much Lori!
