So easy to make and luscious to eat. This one is from my files and probably from recipe cards at the fish mongers.

Ingredients
  • 1 lb scallops
  • 1/2 lb medium shrimp, cleaned, deveined
  • 1 cup crabmeat
  • 3 peeled hard boiled eggs
  • 1/2 lb mushrooms, sliced
  • 1 cup grated American cheese
  • 2 cups white sauce*
  • 1/2 cup bread crumbs mixed with
  • 2 tbsp. butter
  • *WHITE SAUCE
  • 4 tbsp butter
  • 4 tbsp flour
  • 2 cups milk
  • 1/2 tsp sea or kosher salt

Directions
  1. Preheat oven to 350F
  2. Slice eggs and arrange on the bottom of a lightly buttered casserole.
  3. Add scallops, shrimp and crabmeat.
  4. Saute mushrooms in 3 tbsp butter
  5. Add to casserole with cheese.
  6. Pour white sauce over seafood mixture
  7. Sprinkle bread crumbs on top
  8. Bake in oven 25 minutes
  9. *WHITE SAUCE
  10. OVER LOW HEAT
  11. Melt 4 tbsp butter in a saucepan
  12. Add 4 tbsp flour and salt
  13. Bubble together for a minute
  14. Gradually add 2 cups milk until thickened.
  15. Let's Eat!

I don't know why I keep torturing myself by coming on here during my lunch. I always find something I wish I had to eat;-)
I must admit, my dear, the American cheese threw me for a moment (the snob in me?) But I see why you use it -- a stronger cheese would cover the delicate flavors of the seafood. Again, very nice! Next time I'm stocked up on the seafood, you can be rest assured I'll try this.
