Perfect Summer Shish-ka-bobs Recipe
These are a great crowd pleaser. It's super easy, and over high heat on the grill, the grillmaster is finished in no time and ready to enjoy the party!

Ingredients
  • FOR THE MARINADE:
  • 1-1/2 tsp. garlic powder
  • 2 T. brown sugar
  • 1/2 tsp. salt
  • 1/2 C. veg oil
  • 14 oz. pineapple juice
  • KA-BOBS:
  • 2-3 pounds boneless, skinless chicken
  • 1 pound fresh mushrooms
  • 2 green bell peppers
  • 2 red bell peppers
  • 2 zucchini
  • 1 fresh pineapple
  • 2 sweet onions
  • 2 quarts cherry tomatoes

Directions
  1. Mix marinade ingredients. Cut chicken into just-larger-than-bitesize pieces. Mix chicken and marinade, chill between 1-6 hours.
  2. Prep vegetables into large chunks and separate. (De-stem mushrooms, bell peppers into 1" squares, zucchini into coins, pineapple and onions into large chunks.)
  3. Alternate vegetables and chicken onto wooden skewers - put a pineapple chunk next to each piece of chicken. Average 3 pieces of chicken per skewer. Be sure to get at least one piece of each veggie on each skewer.
  4. Grill on high heat for about 10 minutes, rotating a couple of times to cook evenly.
  5. Serve with cooked rice.
