Peach Cucumber Salsa Recipe

Ingredients

1 Cup Diced Tomato

1 Cup Diced Cucumber

1 Cup Diced Frozen Peaches - still frozen

1/ 2 Cup Diced Yellow Bell Pepper - any color will do

1 / 2 Cup Diced Red Onion

3 or 4 Diced Jalapenos - I used 6 = )

1 / 2 Cup Chopped Cilantro

3 Tblsp Lime Juice

3 Tblsp Orange Marmalade - any preserve would do.

Directions

Combine all vegetables in a glass bowl and gently mix. Put the marmalade in small glass bowl, heat in microwave till the preserves melt - about 10-15 seconds, add the lime juice and mix well. Drizzle this over the salsa. Mix gently and serve with corn chips.
