Ingredients

1/4c extra virgin olive oil

2Tbs chopped,fresh rosemary

1Tbs chopped,fresh oregano

1/4c chopped scallions

1 clove garlic,minced

1/4tsp salt

1/4tsp pepper

2 to 3 lbs white or red potatoes,skins on,cut in small pieces

Directions

Preheat oven to 350.In bowl,combine ingredients from the oil through the pepper. Mix well,add cut up potatoes and toss well to coat.

Place potatoes in med. size roasting pan. roast 45 to 60 mins or till browned on outside and fork tender in center,stirring occasionally.

This is just about the way I do mine. It's good to use heavy duty foil in the pan for easy cleanup---and man are they good with dinner!
