How to make it

  • Soak the chick peas overnight.
  • Drain the water, and boil the chick peas for about 15 - 20 minutes.
  • After boiling, run cold water through the chick peas and set aside for 30 minutes, put salt all over the chick peas so that there would be a 'base' taste.
  • [Note: I use a mortar and pestle for my Chunky hummus preparation] Place the chick peas in a bowl and add the Ground Cumin, Paprika, Cayenne pepper, Black pepper, Lemon/Lime. Make sure you oil up the chick peas with Olive oil. Don't put too much oil, because when mashing the chick peas, it will merely soak up the oil.
  • Now all you do is, mash the chick peas! Don't forget that my measurements are of minimal amounts and it varies. So keep on taking a taste and see if you are suited with the taste!
  • Most importantly is Ground Cumin, Paprika, salt and black pepper.
  • Add water bit by bit to keep the mixture moist, and when the mixture seems well-mashed yet with chunky bits, it is ready!
  • Store in the refrigerator and when serving, add a drizzle of olive oil and a tad of paprika on top of the hummus portion.
  • Best served with toasted pitta bread, or any bread is great.
