  • 1 lb orange roughy fillets
  • 3 tb olive oil
  • 1 tsp smokey paprika
  • 1/4 tsp salt
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground black pepper
  • 1 cup pineapple chunks
  • 1 tb cilantro, chopped
  • 1 small pepperoni, thin sliced
  • salt and pepper for seasoning
  • cooked white rice

Directions
  1. In a cup, combine the olive oil, paprika, salt, cardamom, and black pepper and set aside.
  2. Start your charcoal grill. When the coals are hot, spread them into a ring, leaving a 6 inch diameter space in the center of the coals.
  3. Salt and pepper the fish to your taste.
  4. Tear off a 1 foot length of non-stick Reynolds foil. Spread 1/2 the pepperoni in a layer, place the fish over the pepperoni, then cover with the remaining pepperoni and the pineapple chunks. Pour the olive oil and spice mixture over the fish and fruit. Cover with another layer of Reynolds foil and seal the edges.
  5. Place the fish packet on the grill, in the center of the charcoal ring, and cook for 20 minutes without turning.
  6. Remove and serve over cooked rice.

Pineapple, pepperoni & fish with all those yummy spices. I need to get another fish lover to enjoy this with....hubby simply won't try it. Of course, I have a friend coming from Baltimore next month! There's one menu item! Thanks.


Great! A helpful hint - the sauce alone is not enough to season the fish in this recipe. You do need to salt and pepper the fish before putting it into the charcoal. That, will help bring out the flavors.

There are two distinct and separate flavors in this recipe. There is the seared pepperoni and fish, and there is the sweet pineapple. They are very separate.

It's rather unique. last evening was my first time to try the recipe. I liked it.
