Rosemary Roasted Potatoes Recipe
This recipe came from the Grandstaff Estate in Carrollton, Texas. I obtained this and several hundred recipes when I purchased the collection at an estate sale in 1988. Enjoy.

Ingredients
  • 4 russet or Idaho potatoes
  • 2 tablespoons butter
  • 6 shallots chopped
  • 2 sprigs fresh rosemary

Directions
  1. Preheat oven to 350. Wash potatoes and cut into strips. Heat butter in a nonstick ovenproof skillet large enough to hold potatoes in one layer. Add potatoes and shallots and sauté over medium heat for 15 minutes shaking the pan or tossing potatoes every few minutes. Add rosemary and toss with potatoes. Bake in oven 10 minutes longer.
