Aubergine And Lentil Layers Recipe
Something a little bit different to make with your lentils. I prefer red, but can be made with green...

Ingredients
  • 2 large aubergines
  • 1/2 onion diced
  • 1 large clove garlic
  • 1 green pepper chopped
  • 1 tin chopped tomatoes
  • 2 cups red lentils - soaked (could also used tinned lentils - 2 tins approx)
  • Fresh black pepper
  • 50g mozarella cheese (or to your taste)

Directions
  1. slice aubergines and place them, in one layer, on a plate and cover with salt. Leave for 15 - 20 minutes.
  2. Meanwhile, over a low heat, fry onion, garlic and pepper until soft.
  3. Add lentils and cook for a further 5 minutes, covered.
  4. Add tomatoes and fresh pepper to taste.
  5. Rinse aubergine slices.
  6. Place ingredients in an oven dish - starting with a layer of lentils and finishing with a layer of aubergine.
  7. Sprinkle Mozarella over the top of the dish and bake in a medium heat oven for 30 - 45 minutes, until aubergines are cooked and cheese is golden.

I tried looking up 'aubergines' with no luck -- are they known by another name?


Sorry - I am pretty sure that in the USA they are called eggplants (though can't think why...:) I am British and we call them aubergines (which I guess if a direct lift from the French.)
