Ingredients

How to make it

  • slice aubergines and place them, in one layer, on a plate and cover with salt. Leave for 15 - 20 minutes.
  • Meanwhile, over a low heat, fry onion, garlic and pepper until soft.
  • Add lentils and cook for a further 5 minutes, covered.
  • Add tomatoes and fresh pepper to taste.
  • Rinse aubergine slices.
  • Place ingredients in an oven dish - starting with a layer of lentils and finishing with a layer of aubergine.
  • Sprinkle Mozarella over the top of the dish and bake in a medium heat oven for 30 - 45 minutes, until aubergines are cooked and cheese is golden.

    Sorry - I am pretty sure that in the USA they are called eggplants (though can't think why...:) I am British and we call them aubergines (which I guess if a direct lift from the French.)
