aubergine and lentil layers

- 2 large aubergines shopping list
- 1/2 onion diced shopping list
- 1 large clove garlic shopping list
- 1 green pepper chopped shopping list
- 1 tin chopped tomatoes shopping list
- 2 cups red lentils - soaked (could also used tinned lentils - 2 tins approx) shopping list
- fresh black pepper shopping list
- 50g mozarella cheese (or to your taste) shopping list
How to make it
- slice aubergines and place them, in one layer, on a plate and cover with salt. Leave for 15 - 20 minutes.
- Meanwhile, over a low heat, fry onion, garlic and pepper until soft.
- Add lentils and cook for a further 5 minutes, covered.
- Add tomatoes and fresh pepper to taste.
- Rinse aubergine slices.
- Place ingredients in an oven dish - starting with a layer of lentils and finishing with a layer of aubergine.
- Sprinkle Mozarella over the top of the dish and bake in a medium heat oven for 30 - 45 minutes, until aubergines are cooked and cheese is golden.
