Swedish Pound Cake Recipe
This is really, really good! Wonderful dusted with a bit of confectioner's sugar or a dollop of sweetend, vanilla cream

Ingredients
  • CAKE:
  • 2c. sugar
  • 1c. butter
  • 5 eggs
  • 1t. vanilla
  • 2c. flour
  • 1t. baking powder
  • 1c. chopped pecans
  • 1c. coconut
  • GLAZE:
  • 3/4c. sugar
  • 3/4c. water
  • 1/2 stick butter
  • 1t. almond extract

Directions
  1. CAKE:
  2. Cream sugar, butter, eggs & vanilla until light and fluffy.
  3. Add remaining ingredients and mix.
  4. Bake in greased & floured bundt pan @ 325F for 1 hour.
  5. Immediately poke holes all over cake with a wooden skewer.
  6. Set cake aside and make glaze.
  7. GLAZE:
  8. Mix sugar, butter & water in a saucepan over medium heat.
  9. Bring to a boil & boil for 3 min.
  10. Remove from heat and stir in almond extract.
  11. Pour over the cake still in the pan.
  12. Let set until cool and remove from pan.
