Lime Curd Tarts

- 4 limes shopping list
- 3 eggs shopping list
- 1 cup caster sugar shopping list
- 125g unsalted butter, chopped shopping list
- 2 sheets frozen shortcrust pastry, partially thawed shopping list
How to make it
- Finely grate rind from limes and then juice (you need about 1/2 cup).
- place juice, eggs, sugar, butter and 1/2 rind into heatproof bowl.
- Place bowl over a saucepan of simmering water but donlt let the base touch the water.
- Stir continually for 15-20 mins until the mixture has thickened enough to coat the back of a spoon, similar to custard.
- If you just want this as curd, put the curd into a sterilised jar and seal.
- Otherwise, proceed as follows!
- For the pastry tarts, preheat the oven to 200degC.
- Cut rounds from the pastry using a 7cm wide fluted cutter.
- Line a 12 hole patty pan with pastry rounds.
- Bake for 10-12 mins until golden brown. Remove cooked rounds and repeat with remaining pastry.
- When cold, fill with lime curd and decorate with reserved lime rind....
