How to make it

  • Finely grate rind from limes and then juice (you need about 1/2 cup).
  • place juice, eggs, sugar, butter and 1/2 rind into heatproof bowl.
  • Place bowl over a saucepan of simmering water but donlt let the base touch the water.
  • Stir continually for 15-20 mins until the mixture has thickened enough to coat the back of a spoon, similar to custard.
  • If you just want this as curd, put the curd into a sterilised jar and seal.
  • Otherwise, proceed as follows!
  • For the pastry tarts, preheat the oven to 200degC.
  • Cut rounds from the pastry using a 7cm wide fluted cutter.
  • Line a 12 hole patty pan with pastry rounds.
  • Bake for 10-12 mins until golden brown. Remove cooked rounds and repeat with remaining pastry.
  • When cold, fill with lime curd and decorate with reserved lime rind....
