Fancy Fishcakes

- 2 lbs. all-purpose potatoes (I used two huge 'baking' spuds). Do not use the 'waxy' type shopping list
- 50g (just over 1 3/4 oz.) butter shopping list
- 200g (just over 7 oz.) smoked haddock (NOT the orange-dyed stuff) shopping list
- 100g smoked salmon (the mis-shapes and trimmings you can buy more cheaply are ideal) shopping list
- 100g cooked crayfish (crawfish) tails shopping list
- 3 spring onions (scallions) shopping list
- Some flour shopping list
- 3-4 eggs, beaten shopping list
- panko style (dry) breadcrumbs shopping list
- oil for frying shopping list
How to make it
- The recipe provides 16 fishcakes.
- The prep time includes boiling the potatoes and letting them cool afterwards.
- Peel and cut the potatoes into 2" chunks. Boil for 15 minutes or until tender.
- Drain the potatoes well, let them cool a little, then mash well with the butter until no lumps remain. Then let the potatoes go cold.
- Fry the smoked haddock gently until just cooked, let cool, then break the flesh up into flakes. Let it go cold.
- Chop the smoked salmon and the crayfish tails into very small pieces.
- Chop the onions very finely.
- Add the haddock, salmon and crayfish tails to the mashed potatoes, along with the chopped onions. Mix well with a spatula.
- Using your hands, form the mash mixture into balls and then into patties, about 3 1/2"across and about 3/4" thick.
- Dip the patties in flour, then in beaten egg, then into the panko breadcrumbs.
- Shallow fry for about 10 minutes, on a low-medium heat, turning once half-way through.

Wonderful post, Susan. Never had fish cakes with mashed potatoes in them. This sounds really, really good. Two of my favorite wrapped up in one nice, neat package! Wonderful photos too - you are so creative!
