Ingredients
  • 1 1/2 c. yellow cornmeal
  • 2 1/2 c. milk
  • 2 c. all-purpose flour
  • 1 T. baking powder
  • 1 t. salt
  • 1/2 c. sugar
  • 2 eggs, beaten
  • 1/4 c. vegetable oil

Directions
  1. Preheat oven to 400 degrees F.
  2. Spray a cast iron skillet or 8 x 11 in casserole dish with non-stick spray.
  3. In a small bowl, combine the cornmeal and milk; let set for 5 minutes.
  4. In a large bowl, stir together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs, and oil.
  5. Stir just until moistened.
  6. Pour batter into a prepared baking dish/cast iron skillet.
  7. Bake in the preheated oven for 35-40 minutes or until a knife inserted in the center of the cornbread, comes out clean.
