How to make it

  • Preheat oven to 400 degrees F.
  • Spray a cast iron skillet or 8 x 11 in casserole dish with non-stick spray.
  • In a small bowl, combine the cornmeal and milk; let set for 5 minutes.
  • In a large bowl, stir together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs, and oil.
  • Stir just until moistened.
  • Pour batter into a prepared baking dish/cast iron skillet.
  • Bake in the preheated oven for 35-40 minutes or until a knife inserted in the center of the cornbread, comes out clean.
