Homesteader Cornbread

- 1 1/2 c. yellow cornmeal shopping list
- 2 1/2 c. milk shopping list
- 2 c. all-purpose flour shopping list
- 1 T. baking powder shopping list
- 1 t. salt shopping list
- 1/2 c. sugar shopping list
- 2 eggs, beaten shopping list
- 1/4 c. vegetable oil shopping list
How to make it
- Preheat oven to 400 degrees F.
- Spray a cast iron skillet or 8 x 11 in casserole dish with non-stick spray.
- In a small bowl, combine the cornmeal and milk; let set for 5 minutes.
- In a large bowl, stir together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs, and oil.
- Stir just until moistened.
- Pour batter into a prepared baking dish/cast iron skillet.
- Bake in the preheated oven for 35-40 minutes or until a knife inserted in the center of the cornbread, comes out clean.
