Salmon Souffle

- 1 small green bell pepper coarsely chopped shopping list
- 1 small red bell pepper coarsely chopped shopping list
- 1 tablespoon margarine shopping list
- 1/4 cup all purpose flour shopping list
- 1-1/2 cups milk shopping list
- 10 ounces frozen whole kernel corn shopping list
- 3/4 teaspoon dried dill weed shopping list
- 1/4 teaspoon salt shopping list
- 1/8 teaspoon white pepper shopping list
- 3 egg yolks lightly beaten shopping list
- 6-1/2 ounce can salmon drained flaked and bones removed shopping list
- 5 egg whites shopping list
- 1/8 teaspoon cream of tartar shopping list
How to make it
- Sauté bell peppers in margarine for 5 minutes then stir in flour and cook 2 minutes.
- Gradually blend in milk, corn, dill weed, salt and pepper then heat to boiling over medium heat.
- Remove from heat.
- Gradually stir in small amount of vegetables into egg yolks then stir yolks into vegetables.
- Mix in salmon then beat egg whites and cream of tartar in large bowl to stiff peaks.
- Fold into salmon mixture then pour into lightly greased soufflé dish.
- Bake uncovered at 350 for 45 minutes then serve immediately.
