Mushroom Canapes

Another dish my-mother-in-law taught me and we use quite a bit. Filling can be prepared hours ahead,and stored in refrigerator.
Ingredients
- 1/4c butter shopping list
- 2 Tbs fine chopped onion shopping list
- 1/2lb mushrooms,fine chopped shopping list
- 2Tbs flour shopping list
- 1Tbs salt shopping list
- 2Tbs cream shopping list
- 2Tbs sherry shopping list
- 30 2" circles of bread,toasted on 1 side shopping list
- 1/2c grated parmesan cheese shopping list
- 5 slices lean bacon,cut into 30 squares shopping list
How to make it
- Saute onion and mushrooms in butter 5 mins. Add flour and salt and blend. Add cream and cook,stirring constantly for 5 mins. Stir in sherry.
- Spread on untoasted side of bread. Sprinkle with cheese and top with a square of bacon. Broil till bubbly and bacon is crisp. Serve immediately.
