Mushroom Canapes Recipe
Another dish my-mother-in-law taught me and we use quite a bit. Filling can be prepared hours ahead,and stored in refrigerator.

Ingredients
  • 1/4c butter
  • 2 Tbs fine chopped onion
  • 1/2lb mushrooms,fine chopped
  • 2Tbs flour
  • 1Tbs salt
  • 2Tbs cream
  • 2Tbs sherry
  • 30 2" circles of bread,toasted on 1 side
  • 1/2c grated parmesan cheese
  • 5 slices lean bacon,cut into 30 squares

Directions
  1. Saute onion and mushrooms in butter 5 mins. Add flour and salt and blend. Add cream and cook,stirring constantly for 5 mins. Stir in sherry.
  2. Spread on untoasted side of bread. Sprinkle with cheese and top with a square of bacon. Broil till bubbly and bacon is crisp. Serve immediately.
