These are very good and a nice change of pace for an artichoke. I got this recipe from a dear friend who served this at one of our functions and they were so good. Enjoy

Ingredients
  • 15 ounces whole artichoke hearts
  • 1-1/2 cup flour seasoned with salt pepper and paprika
  • 1-1/4 cup buttermilk
  • 3 ounces bread crumbs
  • Vegetable oil for frying
  • 2 tablespoons parmesan cheese grated
  • 2 teaspoons fresh parsley chopped
  • Garlic lemon butter:
  • 1/4 pound butter
  • 1/4 teaspoon salt
  • 1-1/8 tablespoon finely chopped parsley
  • 1/3 teaspoon garlic powder
  • 1-3/4 teaspoon lemon juice

Directions
  1. Drain artichoke hearts well and cut in half being careful not to crush or break leaves.
  2. Dust hearts with seasoned flour and dip in buttermilk.
  3. Dredge in bread crumbs making sure that each heart is well coated.
  4. Fry until golden brown and crispy then place in heated dish.
  5. Place all garlic lemon butter ingredients in saucepan and melt over low heat until melted.
  6. Pour butter sauce over artichokes then sprinkle with parmesan and parsley and serve warm.
