How to make it

  • In a small mixing bowl, add anchovy paste, mustard, finely chopped garlic,and 2 croutons.
  • With the back of a spoon, grind croutons and garlic into the mixture
  • Add lemon juice and egg yoke and whip vigorously
  • Add parmesan cheese, pepper, and olive oil
  • Whip until well blended
  • Yealds approx. 8 oz
