How to make it

  • Combine eggs and sour cream in a large bowl; stir in corn and next 5 ingredients. Pour into a greased 10-inch quiche dish or 2-quart baking dish.
  • Bake at 350 degrees for 40 minutes or until knife inserted in center comes out clean. Sprinkle with shredded Cheddar, and bake 5 - 10 more minutes. Let stand 10 minutes before serving.

    This recipe was in the 1997 Southern Living Collection. It is terrific!! My Family loves it. I make it every Thanksgiving since I found the recipe in '98. Be sure to use fresh or canned corn to stick to the baking time. You can use frozen but extend the baking time to 60 minutes and check frequently after that. As far as 46 servings, I think that is a misprint. It should say six.
