Baked Jack Corn Recipe
Excellent, easy, delicious, spicy side dish. Can be made ahead and baked just before serving.

Ingredients
  • 2 large eggs
  • 16 oz. sour cream
  • 2 cups corn kernels
  • 1 (8 oz.) pkg. Monterey Jack cheese, cut into ½-inch cubes
  • ½ cup soft breadcrumbs
  • 1 (4.5 oz.) can chopped chiles, drained
  • ½ tsp. salt
  • ¼ tsp. pepper
  • ½ cup (2 oz.) shredded Cheddar cheese

Directions
  1. Combine eggs and sour cream in a large bowl; stir in corn and next 5 ingredients. Pour into a greased 10-inch quiche dish or 2-quart baking dish.
  2. Bake at 350 degrees for 40 minutes or until knife inserted in center comes out clean. Sprinkle with shredded Cheddar, and bake 5 - 10 more minutes. Let stand 10 minutes before serving.
