Ingredients
  • L large white flesh fish (mackerel may also be used)
  • 1 tbs crushed garlic
  • 1 tbs crushed ginger
  • 1tbs chopped parsley
  • 1 tbs chopped thyme
  • 1 large red onion (finely chopped)
  • 1 medium tomato (finely chopped)
  • 1 small green pepper (Finely chopped)
  • pinch of salt, pinch of pepper
  • 2 tbs vegetable oil
  • 1 tbs tomato paste
  • 2 tbs soya sauce
  • 3 tbs lemon juice
  • 30 ml oil for cooking the fish

Directions
  1. Clean and prepare the fish
  2. make large cuts on the fish to create openings
  3. mix all the ingredients except the 30 ml oil
  4. spoon the mixture into the cuts made on the fish
  5. heat the 30 ml oil in a large non stick pan
  6. add the whole fish and fry on one side for about 6 minutes
  7. turn over and allow to cook.
  8. a sauce will form around the fish...use to bask the fish as it cooks
  9. NB..Fish cooks faster than meat..so do not over cook
  10. once the flesh is cooked and the dish is aromatic, remove from fire and flavor with a squeeze of lemon
  11. chilli may also be added to the mixture used
  12. serve hot with boiled rice (basmati preferably)
