How to make it

  • Clean and prepare the fish
  • make large cuts on the fish to create openings
  • mix all the ingredients except the 30 ml oil
  • spoon the mixture into the cuts made on the fish
  • heat the 30 ml oil in a large non stick pan
  • add the whole fish and fry on one side for about 6 minutes
  • turn over and allow to cook.
  • a sauce will form around the fish...use to bask the fish as it cooks
  • NB..Fish cooks faster than meat..so do not over cook
  • once the flesh is cooked and the dish is aromatic, remove from fire and flavor with a squeeze of lemon
  • chilli may also be added to the mixture used
  • serve hot with boiled rice (basmati preferably)
