Easy Creole Grilled Fish

- L large white flesh fish (mackerel may also be used) shopping list
- 1 tbs crushed garlic shopping list
- 1 tbs crushed ginger shopping list
- 1tbs chopped parsley shopping list
- 1 tbs chopped thyme shopping list
- 1 large red onion (finely chopped) shopping list
- 1 medium tomato (finely chopped) shopping list
- 1 small green pepper (Finely chopped) shopping list
- pinch of salt, pinch of pepper shopping list
- 2 tbs vegetable oil shopping list
- 1 tbs tomato paste shopping list
- 2 tbs soya sauce shopping list
- 3 tbs lemon juice shopping list
- 30 ml oil for cooking the fish shopping list
How to make it
- Clean and prepare the fish
- make large cuts on the fish to create openings
- mix all the ingredients except the 30 ml oil
- spoon the mixture into the cuts made on the fish
- heat the 30 ml oil in a large non stick pan
- add the whole fish and fry on one side for about 6 minutes
- turn over and allow to cook.
- a sauce will form around the fish...use to bask the fish as it cooks
- NB..Fish cooks faster than meat..so do not over cook
- once the flesh is cooked and the dish is aromatic, remove from fire and flavor with a squeeze of lemon
- chilli may also be added to the mixture used
- serve hot with boiled rice (basmati preferably)
