How to make it

  • Wash and dry unpeeled potatoes then cut into cubes and dry with paper towels.
  • Place potatoes in an ovenproof baking dish then drizzle with olive oil and toss to coat potatoes.
  • Crush garlic with flat section of a knife then mince.
  • Place garlic in a bowl and add salt then mash with spoon until it becomes almost a paste.
  • Taste with the potatoes then add onions, parsley and red pepper flakes.
  • Toss to mix well then bake at 400 for 45 minutes stirring frequently.
  • Remove from oven and broil 4” from flame for 10 minutes

    We liked these a lot. I can't deal with any heat so I omitted red pepper flakes. Taters come out tender but crispy. Onion nearly carmelized, tender and sweet. One could probably add Italian seasoning if one liked or thyme or any herb really. I went with recipe. Delicious version of roast potatoes. Will make again.

    We really liked this recipe and I will be making it again. I toned down the red pepper flakes to 1/2 tsp as there's a heat wimp in the house. I didn't have any fresh parsley and I don't think that it changed the out come of the potatoes. The onions did cook up faster than I anticipated but I may have cut them smaller than the submitter intended. I didn't put them under the broiler, they were well done after 45 minutes. Thanks for sharing, Bren.
