Ingredients
  • 3 large green peppers,thin sliced
  • 3 large sweet red peppers,thin sliced
  • 2 Tbs olive oil
  • 1-1/2 tsp salt
  • 1 tsp pepper
  • 1/2 c soft bread crumbs

Directions
  1. Place peppers in two 15x10" baking pans. Drizzle with oil and sprinkle with salt and pepper;toss to coat
  2. Bake at 400 for 30-35 mins until tender and skins slightly blackened
  3. Sprinkle with bread crumbs. Bake 15-20 mins longer or till lightly browned.

I love peppers even more since trying this recipe! They were really good, with a little bit of vinegar sprinkled on with the bread crumbs.
