My Hungarian Grandmas Noodle Dish Recipe
This is a quick dish my grandma made for me when I was growing up, when it was too hot to cook. I still make it today. The combo of ingredients may sound odd & simple, but please try it. There are no exact measurements. Just go by feel.

Ingredients
  • A bag of broad egg noodles - about 12-16 oz
  • 1 carton - 8 oz cottage cheese (grandma used pot cheese or farmers's cheese) - I use Knudsen's low-fat
  • salt and pepper, to taste
  • butter
  • Paprika - optional

Directions
  1. Boil & drain your egg noodles.
  2. Add salt & pepper to taste. Stir in a big gob of butter, stir gently to combine until the butter is melted into the noodles. Next, add your cottage cheese; gently stir again to combine the noodles, butter, & cheese.
  3. Plate the buttery noodles & cheese into serving bowls. Sprinkle with paprika, if desired. Eat immediately, as the noodles cool down quickly.
  4. For dessert, on a hot Summer's day, she made a bowl of sliced strawberries, bannans, & blueberries - topped with sour cream. Real comfort food, for me.

I'm not Hungarian and have done this without the paprika numerous times over the years, too. It is simple and total comfort food and I love it.
