Chevre Stuffed Chicken Breasts

- 3 oz. herb coated fresh goat cheese shopping list
- /14 C sun –dried tomatoes packed in olive oil, chopped shopping list
- 1 love garlic, finely chopped shopping list
- 1/8 tsp freshly ground black pepper shopping list
- 4 (6-8oz) boneless, skinless chicken breasts shopping list
- 1 ½ T olive oil shopping list
- ½ tap kosher salt shopping list
How to make it
- Preheat oven to 375
- Spray a 9 x 13 baking pan with cooking spray
- Using a fork, mix together goat cheese, sun-dried tomatoes, garlic and pepper in a small bowl
- Make a pocket in each chicken breast by cutting a 3 x 1 ½” deep horizontal slit into the smooth part of the breast on the thickest side, taking care not to cut all the way through
- Stuff goat cheese mixture into pockets; use a toothpick inserted diagonally to close pocket
- In a large non-stick skillet, heat oil on medium high
- Sprinkle chicken with salt; place stuffed chicken in skillet with the smooth rounded side down
- Cook 5 minutes or until golden
- Remove from pan and place golden side up into baking pan
- Bake at 375 for 14 to 16 minutes or until cooked through or internal temp is 175F
- Remove toothpicks, slice and serve immediately
