How to make it

  • Preheat oven to 375
  • Spray a 9 x 13 baking pan with cooking spray
  • Using a fork, mix together goat cheese, sun-dried tomatoes, garlic and pepper in a small bowl
  • Make a pocket in each chicken breast by cutting a 3 x 1 ½” deep horizontal slit into the smooth part of the breast on the thickest side, taking care not to cut all the way through
  • Stuff goat cheese mixture into pockets; use a toothpick inserted diagonally to close pocket
  • In a large non-stick skillet, heat oil on medium high
  • Sprinkle chicken with salt; place stuffed chicken in skillet with the smooth rounded side down
  • Cook 5 minutes or until golden
  • Remove from pan and place golden side up into baking pan
  • Bake at 375 for 14 to 16 minutes or until cooked through or internal temp is 175F
  • Remove toothpicks, slice and serve immediately
