How to make it

  • Pre-heat your oven to 180 Degrees Cent .
  • Butter the bread and slather with the marmalade
  • Cut each slice into four triangles
  • Layer the triangles into a smallish buttered baking dish ,standing up with points to the top.
  • Scatter with raisins to taste --I use plenty .
  • Mix together the milk ,cream, sugar, and eggs ,whisking well, and then pour over the bread .
  • Then scatter the peel ,zest and brown sugar over the bread pudding
  • Place in the oven and cook for about 35 mins but check .I like a golden crusty top to contrast with the custardy centre . So I leave it to cook for the full 40 mins . Its up to you .
  • When we were kids staying on our Granparents farm ,plain bread and butter pudding was called Poverty Pudding and was just that --bread and butter and little else .This is a luscious dessert with something extra that Mom made as times improved and ingredients became available .

    You're got me hooked. Lush food is my business and I am not passing by this one without giving it a go. I can just imaging the lushness. When we did bread and butter pudding, we never knew it as poverty pudding. Actually, we had nutmeg and sultanas! ..Ha no more! .... and it was still a favourite of ours. We haven't made it for quite a while and I reckon now, that it'll be a while more before we do. Anyhow, as with you lot, I'm hooked already. It's a big weekend coming for me, but if I can fit it in, I will. Thanks, I've got it saved and I'll report back.

    Thank you for being my newest cooking buddy! This recipe sounds yummy, and a great way to use up unfinished bits of bread. I'll have to "translate" the measurements, because we live 'across the pond' where metric is not my strong suit. Looking forward to seeing more tasty treats!
