How to make it

  • In a saucepan, bring water to a boil. Add raisins and dried fruit, then remove from heat. Let stand for 10 minutes: drain well and set aside. In a bowl, combine, the flour, sugar substitute, cinnamon, baking soda, salt and nutmeg. In another bowl, combine the eggsubstitute, applesauce, oil, and vanilla until blended. Stir into the dry ingredients until well blended. Fold in nuts and reserved fruit. pour into a 10" fluted tube pan coated with nonstick cooking spray. Bake at 325 for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes before removing to a wire rack.

    My daughter makes cakes and decorates like you see on tv. Her friends actually order them. She has been looking for a diabetic version of a really good cake and I think I just found it. Thanks so much.
